Aubergine Cannelloni

List of ingredients: 
  • 1 box of PANZANI Cannelloni
  • 1 packet of tomato purée (500 g)
  • 6 aubergines
  • 2 garlic cloves
  • 2 shallots
  • 1 tsp curry powder
  • 80 g Parmesan
  • Salt, pepper

  1. Grill the aubergines in the oven at thermostat 7 for 20 minutes.
  2. Scoop out the flesh and brown it with shallots, garlic and olive oil. Sprinkle the curry powder, salt and pepper and cook for 15 minutes.
  3. Stuff the cannellonis with this stuffing and put them in a gratin dish. Give a layer of tomato purée. Sprinkle on some Parmesan.
